Falling number is a standardized laboratory test for measuring sprout damage in grains, particularly wheat, by determining the time in seconds for a stirrer to fall through a hot, aqueous flour gel. A low falling number indicates high alpha-amylase activity, meaning the grain has sprouted and the starch has broken down, resulting in poor quality for baking. In contrast, a high falling number signifies sound grain with intact starch and satisfactory quality for milling and baking. 


JJLF Falling Number Tester is a specialized instrument for measuring amylase activity in grains, manufactured in accordance with the national standard GB/T 10361-2008, "Wheat, rye, and their flour, durum wheat, and their semolina—Determination of falling number." It accurately determines the degree of germination damage in grains and is suitable for testing grains, particularly wheat and wheat flour. It is an essential instrument for quality inspection in grain storage and flour processing.

 

This dual-tube falling number tester consists of a test unit (water bath, stirring system), a control unit display, and a printer. The display shows the falling number. The control unit utilizes a high-performance, low-power single-chip microcomputer and an internal uninterruptible battery. It accurately records two sets of falling numbers for each measurement, as well as the actual date and time of each measurement. A microprinter with front-loading paper automatically prints the sample number, falling number, and date.
